It is found between June and September, at altitudes that differ from one mountain to another.<\/p>\n<p>As the summer holidays come to a close, you can continue enjoying those sun-filled flavours at home with this recipe for one of Savoie\u2019s greatest culinary specialities, blueberry tart.&nbsp;&nbsp;<\/p>\n\n<div class=\"block block-core-spacer\">\n<div style=\"height:30px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n<\/div>\n\n<div class=\"block block-core-heading\">\n<h2 class=\"wp-block-heading\"><strong>A souvenir dessert,<\/strong> like the Proust&#8217;s madeleine<\/h2>\n<\/div>\n\n<div class=\"block block-core-spacer\">\n<div style=\"height:30px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n<\/div>\n\n<p>There are of course as many versions of this recipe as there are cooks in our kitchens. This one is from <strong>Sandra, pastry chef in one of Les Gets&#8217; restaurants<\/strong>, who unveils her secrets for a blueberry tart that\u2019ll fire your tastebuds as well as those childhood memories.&nbsp;<\/p>\n<p><em>\u201cFor me, blueberry tart brings back memories of afternoons at my grandmother\u2019s house. One blueberry in the basket = five blueberries in the mouth. <em>\u201cTo gather the berries without damaging them, I use a plastic bucket that\u2019s fairly wide and not too deep, to avoid crushing the small fruit.\u201d<\/em><\/p>\n<p><strong>Then you sort them:<\/strong><\/p>\n<p>\ud83d\udca1 This tip from Sandra makes sorting the berries much easier: <em>\u201cPlace the blueberries at the higher end of a slightly-tipped tray. Gently shake the tray from side to side so that the berries roll to the bottom, leaving the leaves and twigs at the top, as if by magic.\u201d<\/em>&nbsp;<\/p>\n<p>Then wash the wild blueberries thoroughly. Ideally, bake them for 5 minutes directly on the tart base. Blueberries can be eaten up to 3 days after harvesting. Otherwise, they keep well in the freezer.<\/p>\n\n<div class=\"block block-core-spacer\">\n<div style=\"height:30px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n<\/div>\n\n\n<figure class=\"wp-block-gallery columns-3 is-cropped wp-block-gallery-1 is-layout-flex wp-block-gallery-is-layout-flex\"><ul class=\"blocks-gallery-grid\"><li class=\"blocks-gallery-item\"><figure><img decoding=\"async\" src=\"https:\/\/www.lesgets.com\/app\/uploads\/2020\/08\/Myrtilles.jpg\" alt=\"\" data-id=\"18331\" data-full-url=\"https:\/\/www.lesgets.com\/app\/uploads\/2020\/08\/Myrtilles.jpg\" data-link=\"https:\/\/www.lesgets.com\/myrtilles\/\" class=\"wp-image-18331\"\/><\/figure><\/li><li class=\"blocks-gallery-item\"><figure><img decoding=\"async\" src=\"https:\/\/www.lesgets.com\/app\/uploads\/2020\/08\/Mirtylles_-32.jpg\" alt=\"\" data-id=\"18328\" data-full-url=\"https:\/\/www.lesgets.com\/app\/uploads\/2020\/08\/Mirtylles_-32.jpg\" data-link=\"https:\/\/www.lesgets.com\/mirtylles_-32\/\" class=\"wp-image-18328\"\/><\/figure><\/li><li class=\"blocks-gallery-item\"><figure><img decoding=\"async\" src=\"https:\/\/www.lesgets.com\/app\/uploads\/2020\/08\/IMG_1154.jpg\" alt=\"\" data-id=\"18339\" data-full-url=\"https:\/\/www.lesgets.com\/app\/uploads\/2020\/08\/IMG_1154.jpg\" data-link=\"https:\/\/www.lesgets.com\/img_1154\/\" class=\"wp-image-18339\"\/><\/figure><\/li><\/ul><\/figure>\n\n\n<div class=\"block block-core-spacer\">\n<div style=\"height:40px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n<\/div>\n\n<p>For those who enjoy raw blueberries, Sandra suggests an alternative, which is none other than her grandmother\u2019s recipe.<\/p>\n<p><em>\u201cIf you don\u2019t want to use cr\u00e8me p\u00e2tissi\u00e8re or chantilly cream, you can brush the tart base with a beaten egg and flash bake it for 5 minutes at 180\u00b0C.\u201d This will create a protective coat to ensure the base stays nice and crispy. &nbsp;<\/em><\/p>\n<p>Another suggestion to stop the pastry going \u201csoggy\u201d is to brush it with a thin layer of melted white chocolate and leave it to cool in the fridge for 3-4 minutes.<\/p>\n\n<div class=\"block block-core-spacer\">\n<div style=\"height:30px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n<\/div>\n\n<div class=\"block block-core-heading\">\n<h2 class=\"wp-block-heading\">RECIPE &#8211; serves 8 to 10 people<\/h2>\n<\/div>\n\n\n<figure class=\"wp-block-image size-banniere is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.lesgets.com\/app\/uploads\/2020\/08\/2020_08_28_tarte_myrtilles_as_des_neiges_LD_LesGets_MelCarle_IMG_6045-1920x1080.jpg\" alt=\"\" class=\"wp-image-18313\" width=\"1440\" height=\"810\"\/><\/figure>\n\n\n<div class=\"block block-core-spacer\">\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n<\/div>\n\n<p><u><strong>Sweet Pastry:<\/strong> <\/u><\/p>\n<ul>\n<li>150g butter (unsalted)<\/li>\n<li>1 egg<\/li>\n<li>90g icing sugar<\/li>\n<li>270g flour<\/li>\n<li>30g ground almonds<\/li>\n<li>Pinch of salt<\/li>\n<\/ul>\n<p>In a bowl, first cream together the butter and icing sugar. Mix in the egg, then the flour, followed by the ground almonds and, finally, the salt.<\/p>\n<p>Place the pastry in a tart tin and bake at 180\u00b0C (gas mark 6) for about 15 minutes (keep an eye on its colour).<\/p>\n<p><u><strong>Cr\u00e8me p\u00e2tissi\u00e8re:<\/strong> <\/u><\/p>\n<ul>\n<li>1 litre vanilla-infused milk<\/li>\n<li>180g eggs<\/li>\n<li>150g sugar<\/li>\n<li>80g cornflour<\/li>\n<\/ul>\n<p>Bring the vanilla-infused milk to the boil. Remove from the heat and pour it over the mixed eggs, sugar and cornflour. Return to the heat, bring back to the boil and cook<strong> for 2 minutes, whisking constantly<\/strong> over the entire surface of the pan. Remove from the heat, place the mixture in a gratin dish and cover with plastic film, ensuring the film touches the cream in order to prevent a skin forming. Place in the fridge. Once the cream has cooled down, pour it into a mixing bowl and whisk again until perfectly smooth.<\/p>\n<p><strong><u>Neutral coating:<\/u><\/strong><\/p>\n<p>As an extra touch, you can glaze the fruit to give it a colourful, appetizing shine. You may already be used to making your own glaze with water and sugar or honey.<\/p>\n<p>If not, here\u2019s a great tip: use red-fruit jelly diluted in a little warm water to coat your blueberries and give them a shine.<\/p>\n<p>To finish your tart, just spread or pipe the cr\u00e8me p\u00e2tissi\u00e8re over the cooked pastry base, then carefully place your blueberries on top.<\/p>\n<p><\/p>\n\n<div class=\"block block-core-heading\">\n<h2 class=\"has-text-align-center wp-block-heading\">Bon app\u00e9tit
